Dinner Platter 1) Bhat, Porota, Alu Chholar torkari, Dim er curry, Raita.

Bhat - 

Chhal dhuye jol jhorate din. Dekchi te jol fute uthle chhal din. 10-15 mint valo vabe fute uthle gas ba induction off kore vap e dhaka rekhe din. 15 mint por bhat er fan jhoriye nin.
 Tips - 
Bhat ranna korar samay koyek fota lebur ros dite paren, ete bhat sada hobe.

 Bhat fotar samay ek chamoch ghee diye dite paren (especially pressure cooker ba rice cooker e korle), bhat er ekta alada texture r swad paben.

Jodi eksonge beshi vat ranna koren tahole khabar soda alpo diye dite paren.

Chhal vijiye rakhun sob samay, kichukhon fotar por vap e rakhun, abar futiye fan jhoriye nin. Ete gas ba jalanir sasroy hobe. Bhat er swad o bojai thakbe.

 Ek mutho motor suti vat seddo hobar por vat er modhye din. Fan jhoriye din. Ete motor suti vat hoye jabe.


Porota -

Moidar porota anek e valobasen. Ami Aatta (whole wheat) diyei porota banai. Alpo moida mishiye die makhar samay. Beshir vag Aatta, ektu moida, vegetable oil alpo, nun, kalo zeere ba joan (dutoi dite paren) diye mekhe rakhun. Makhar samay gorom jol bebohar korun ba chhana toire por beche jaoa jol ta din. Valo vabe makha hole lechi kete ichhe moton size e (tin kona vaj kore ,ba gol, ba char kona) bele tawa te seke nin. Dupith ei tel / ghee / butter buliye nin.


Alu Chholar Torkari -

Alu choto r dumo dumo kore kete seddo kore nin. Chhola vijiye rakhun. Vije gele pressure cooker e seddo kore nin nun, khabar soda alpo diye.
Korai e tel din, tej pata, sukno lonka foran din. Foran e sugondho berole ada - zeere bata din, halud din (tel er opor halud dile tel chite asbe na) , chhola r alu seddo din. Khub valo kore nara chara kore koshe nin. Ektu kosha hole tomato ghose plup ta din. Nun din. Dhone guro din. Abar koshe nin. Ichhe hole dry rakhte paren, abar ektu jol diye gravy banate paren. Namar samay ghee, gorom moshla choriye din.

 ** Ami niramish vabe korechi. Apnara piyaz kuchi dite paren foran e. Rasun bata o dite paren.

Dim er curry -

Dim seddo kore chariye du vag e vag kore nin (eta amar ichha moton ami korechi, apnara apnader ichhe moton dim ta rakhben ,gota ba fali kore).
 Tel er opor halud, chini foran din, ektu piyaz bata (ghose nite paren kurni te), tomato bata, ada- rasun bata, zeere - dhone guro , nun diye slow anch e koshe nin. Makha makha gravy thakbe. Seddo dim er piece er opor ei gravy ta chhoriye din. Dim ta ke ami vaji ni. Apnader ichhe hole veje nite paren.

Raita -

Tok doi fetiye nin. Sosha, piyaz, gajor ghose nite paren abar kuchi kore nite paren. Tok doi er sathe mishiye nin. Bit nun / black salt, gol morich guro, alpo lebur ros diye arek bar mishiye nin.



 Dinner Platter 2) Bhat, Dal Seddo, Dim Seddo, Alu makha, Achar.


Bangalir khabarer talikai seddo vat thakei, bises kore ratre / dinner e seddo vat khete pochondo koren na emon bangali khub e kom achen.

Bhat -

Seddo rannar sathe khub jhor jhore bhat valo lage na. Ektu norom hole valoi lage. Bhat ta ektu beshi seddo kore norom korte paren. Khabar samay prothom bhat e ghee, nun, lebu neben, khete khub e valo lagbe.

Dal seddo -

musurir dal jol e dhuye dal er ghoti te ( dal seddo korar ghoti pao jai, ei bises ghotir mukhe ekta dhakna thake ) musurir dal diye bhat ranna korar samay bhat er dekchi ba hari te diye din. Ete ek e samay e dal seddo r bhat hoye jabe. Pore ghoti ta bar kore thanda hole dhakna ta khule dal seddo bar kore nin. Nun, sorsher tel, kancha piyaz o lonka diye mekhe nin. Patla koreo makhte paren, abar tight vabeo makhte paren.
 Anek barite dal seddo korar jonno alada kapor rakha hoi. Rumal er size  er kapor er tukro te musurir dal diye seta ke bhat er harir modhye diye deoa hoi.

Alu makha -

 Alu chhal chariye bhat er hari tei diye dite paren. Abar alada vabeo seddo korte paren.

 60 rokomer alu makha korun alada alada foran r upokoron diye.


1) piyaz vaja, sukno lonka vaja, vaja sorsher tel, nun diye mekhe nin.

2) rasun vaja, sukno lonka vaja, vaja sorsher tel, nun diye mekhe nin.

3) ada vaja, sukno lonka vaja, vaja sorsher tel, nun diye mekhe nin.

4) kancha piyaz, lonka, sorsher tel, nun diye mekhe nin.

 5) tomato kuchi, piyaz kuchi, dhone pata kuchi, rasun kuchi, achar er tel, nun diye mekhe nin.

6) sukno lonka tel e veje nin, zeere veje nin gota, nun diye sukno lonka ta  guro kore nin. Eta diye alu mekhe din. Darun sugondo asbe alu makha te.

7) rasun vaja, ghee, nun, kancha lonka diye mekhe nin.

8) ghee, nun, lonka diye mekhe nin.

9) Ghee, lebur ros, nun, kancha lonka diye mekhe nin.

10) tel er opor ada kuchi, rasun kuchi, piyaz kuchi, lonka kuchi diye lal kore vajun, ete alu seddo gulo din, nun din, nara chara korun. Ei rokom alur vortao khete valo lagbe.

11) tel er opor ada bata din, dhone - zeere - lonka guro, halud din, makha alu gulo din, nun din, nara chara korun, lalche vab ele namiye nin.

12) tomato puriye chhal chariye nin. Sukno lonka puriye nin, rasun o puriye nin, makha alur modhye ei tomato, sukno lonka ,rasun, nun ,kancha sorsher tel diye mekhe nin.

13) begun puriye chhal chariye nin (begun ta choto hole valo hoi) , makha begun, alu seddo, piyaz kuchi, lonka kuchi, tel, nun diye ek sathe mekhe din.

14) alu makha, tomato kuchi, piyaz kuchi, dhone pata, motor suti, lonka kuchi , zeere vaja guro , nun diye mekhe nin.

15) Alu mekhe nin, korla seddo, nun, sorsher tel, kancha lonka diye.

 16) Kochu seddo , alu seddo , kancha piyaz lonka, tel ,nun diye mekhe nin.

17) tel er opor sorshe, zeere, sukno lonka, curry pata foran din. Ei foran ta diye, nun er sathe alu seddo ta mekhe nin.

18) tel er opor capsicum kuchi din, ada kuchi din, piyaz kuchi din, veje nin, ei vaja diye alu mekhe nin, nun diye.

 29) panta vat e ek dhoroner alu makha khub valo lage - tok doi, sukno lonka vaja r kancha piyaz jiri jiri kore kata diye seddo alu makha. Chomotkar er swad, jara khan ni tara er swad nite paren.

30) sada til veje bete nin, songe sukno lonka r rasun (rasun charao korte paren) bete nin, nun diye alu seddo mekhe nin. Ete ektu lebur ros dile khub valo lagbe.

 31) Alu seddo mekhe nin. Songe din kora kore nim pata vaja, ektu ghee r nun. Khete darun lagbe.

32) Alu ,Gajor seddo kancha lonka, nun, sorsher tel diye mekhe valoi lagbe khete.

33) Alu seddo, chhatu, kancha piyaz, lonka, sorsher tel, nun , lebur ros diye mekhe nin. Gorom vat, Panta vat e valo lagbe.

34) Alu, barir toire chhana, sukno lonka tel e veje nun diye guro kore nin, sob mekhe nin. Khete valo lagbe.

35) Alu, dheros / vindi seddo makha nun, lonka ,sorsher tel diye. Etao valo lagbe.

36) Alu seddor sathe gota musuri seddo kancha piyaz lonka kuchi , nun sorsher tel diye makha vat, muri, ruti sob er sathe khete valo lagbe.

37) Alu makhar sathe bori veje mekhe din, ghee, sukno lonka diye. Prothom vat e khub valo lagbe.

38) Alu makhar sathe motor suti seddo chotke din, lebur ros, nun, gol morich din ba kancha lonka ( Mushy Peas er moton etao khete valo lagbe) diye.

45) Korai e tel din, piyaz kuchi, chine badam theto kora, sukno lonka kuchi kore din, ada kuchi kore din, ei foran ta diye alu seddo mekhe nin. Khete valo lagbei.

46) Alu seddor sathe , Lau er pata ba Kumro pata seddo makha nun ,tel diye chomotkar lagbe.

47) Capsicum seddo diye alu seddo makhte paren. Songe lebur ros, nun, tel, gol morich guro.

48) Gimer sak bole ekta sak paoa jai. Ei sak ranna korar por ektu niye alu seddo makhle khete valo lage prothom vat e. Ei sak ektu teto hoi.

49) Alur sathe mulo seddo jara try koren ni tara korte paren. alu r mulo seddo nun, tel, lonka diye mekhe nin.

50) Alu seddo kore nin, tetul er plup, kabli chhola, kancha piyaz, lonka diye mekhe nin. Panta vat e valo lagbe gorom kal e.

51) Hummus (Kabli chhola bata diye ekta chutny hoi) diye Alu seddo mekhe nin. Khete valo lagbe.

52) Barite rasun er achar thakle sudhu sei rasun er achar diyei alu mekhe nin. Gorom vat e khan.

53) Sudhu piyaz koli tel e veje nin. Alu seddor sathe nun diye mekhe nin. Khete valo lagb

54) Alu, kumro seddo kore mekhe nin, nun, tel, kancha lonka, piyaz kuchi diye. Prothom bhat e chomotkar lagbe.

55) Alu r lau dumo dumo kore kete seddo kore nin. Sei seddo alu r lau mekhe nin ichhe moton foran diye.

56) kono sobji banabr samay je moshla toire kore tel er opor koshe nen. Sudhu Sei moshla kosha hole ektu tule rekhe din. Seta diye alu mekhe nin. Khete khub valo lagbe.

57) Alu seddo, songe Salgom / Olkopi seddo mekhe nin ichhe moton foran diye.


58) Seddo kora Alur sathe chal kumro seddo mekhe nin, nun tel kancha lonka diye.

59) Anekta Alu seddor sathe ekta vegetable chop ba Alur chop o mekhe dite paren. Khete sottie sundor lagbe. Jara try koren ni tara kore dekhun. Kancha piyaz, lebur ros, nun, lonka mekhe deben.

60) Barite anekta salad beche gele sei salad kuchi kore nin. Alu seddo, lonka, lebur ros diye mekhe nin. Muri diye khete valo lagbe.

Dim seddo -

 Dim  seddo vat e na deoai valo, dim e anek rokom bacteria thakte pare. Sauce pan e seddo korte din. Ektu nun diye din seddo korbar samay. Half boil chaile 7-8 mint futiye niye vap e rekhe din r o kichukhon. R full boil chaile 10 mint futiye vap e rekhe din 10 mint.



Dinner Platter 3) Pur deoa Ruti, Doi moshla diye, Panner diye chholar dal, Slice Sosha

Pur deoa Ruti - 

Aata ,alpo moida ,nun, gorom jol r doi diye mekhe nin. Ete norom ruti hobe. Pur er jonnno beson, chhatu, joan, ada bata tel er opor nara chara kore alpo jol diye mekhe nin. Ei pur ta lechir modhye vore bele jevabe ruti kore sei vabei tawa te diye ulte palte nin. Gas er opor seke nin. Fule uthbe pur vora ruti gulo. Butter / ghee buliye rakhun.

 Doi Moshla diye -

Tok doi, zeere vaja guro, gol morich guro, chat moshla , bit nun diye poribeshon korun. Jara chini pochondo koren tara moshla chhara chini diye doi khete paren.

Paneer diye chholar dal - 

Chholar dal seddo kore nin nun halud diye. Korai e tel din, ada kuchi ,sukno lonka foran din, hing din, panner diye nara chara korun. Motor suti, tomato kuchi din, ektu kosha hole chholar dal din. Ghee ,gorom moshla diye naman. Makha makha hobe dal ta.

** Piyaz ,rasun o dite paren.

** sobji kuchi kore dite paren ichhe moton.

** chholar dal e kaju, kismis, narkel kora dite paren.


 Dinner Platter 4) Chot joldi Bhat vaja sobji diye r dim er poach / 
Hot Garlic Butter rice with vegetables and egg poached.

 Pan e olive oil din mushroom slice kore, gajor r beans halka vapiye niye fry pan e din. Gol morich guro, nun diye nara chara kore namiye nin, jeno mushroom soft hoi.

 Bhat jhor jhore kore banaben ( jodi sokal er bhat thake seta teo kora jabe). Korai e ba pan e ektu vegetable oil r butter din, slow anch e butter ta gorom holei rasun crushed kore din / theto kore din. (Herbs dite paren ichhe moton oregano, basil, rosemary, parsley, all purpose seasoning, lemon grass, jeta ichhe dite paren).

 Ekta plate e Bhat, pase sobji fry r ekta dim er poached sajiye poribeshon korun.


 Dinner Platter 5) Mota Atop Chhal er Vat, Mug er dal, ghee diye fulkopi vaja.

Khub sadharon, chot joldi hobe, kintu khete jothesto suswadu ei samanno ranna ti. Jara ekhono try koren ni, tara korte paren. Valo lagbei.

 Mota Atop er bhat -

 Atop chal dhuye jol jhorate din ( beshi dhoben na ete gondho ta chole jai). Pressure cooker e alpo ghee e diye atop chal ta nara chara korun. 2-3 mint por jotota chal tar digun jol diye 2 to whistle er apekhha korun. Duto whistle ele flame off kore din. Vap e rakhun r o 15 mint. Pore cooker er dhaka khulun. Khub sundor norom kintu jhor jhore bhat paben.

Mug / Moog er dal -

 Pressure Cooker e mug / moog dal veje nin tel charai, nun, halud, kancha lonka ,ektu narkel kora ( na thakleo asubidha nei) diye seddo kore nin. Ichhe hole foran dite paren. Ami simple rekhechi.

 Ghee diye Fulkopi vaja -

Fulkopi (deshi hole valo swad asbe) nun jol e vapiye jol fele din. Fulkopir jol jhore gele alada rakhun. Korai e alpo vegetable oil r ghee din, ekta sukno lonka din du vag kore. Slow anch e rakhun ( anch barale ghee pure jabe, jodio vegetable oil deoa ache bole oto ta purbe na). Fulkopi gulo din, swad moton nun din ( seddo korar samay ektu deoa chilo), halud din, veje nin lal kore. Gorom bhat, dal er sathe ghee, sukno lonka diye vaja fulkopi khub valo lagbe.



 Dinner Platter 6) Chingrir diye moshladar polaw


Ek ek din ek ek rokom er menu valo lage sobarir e. Bhat, dal, rutir majhe ekdin Chingrir polau hok. Ete barir lokerao khub khushi hoi. Jehetu Biriyanir moton chingrir moshla dar polaw nijei ekta meal tai ami songe r kichu rakhini.

Chingrir Moshla dar Polaw -

Boro size er Chingri machh poriskar kore ( ichhe hole chhal chariye nin, anek jon chal pochondo koren, tara rekhe din) nun, halud, lebur ros, ektu chini diye marinate kore rakhun ( 20 mint).
 Basmati Chal dhuye jol jhorate din.
 Moshla toire kore nin - zeere - ada - gol morich bata. Jayetre - jaifol guro, gorom moshla guro.
 Pressure cooker e vegetable oil r ghee din, tej pata, piyaz kuchi din, lal hole, ada - zeere - gol morich bata din, basmati chal diye nara chara korun, nun, halu din, jaifol - jayetre guro din, kaju, kismis din, narkel kora din, chini din alpo, chingri machh gulo din koshe nin.
 Puro rannai anch slow thakbe. Machh kosha hole ektu por jotota chal tar digun jol din, gorom moshla guro din, ghee din arektu, nun swad moton din.
Pressure cooker er dhaka lagiye 2 to whistle er apekhha korun. 2 to whistle asle gas / induction off kore din. Pressure cooker er dhaka na khule rekhe din 15-20 mint. 15-20 mint por dhaka khule poribeshon korun.


  
Dinner Platter 7) Bhat , Sobji diye bata machh er jhol.


Sobji diye bata machh er jhol -

Kancha kola, Alu, gajor, penpe seddo kore nin nun diye (korai e tel er opor kancha sobji diyeo koshte paren).
 Tel er opor kalo zeere, kancha lonka foran din, ada - zeere - gol morich bata din, seddo kora sobji din, halud din, khub valo kore koshe nin. Kosha hole  tomato bata / patla kore kete din, abar nara chara korun kosha hole jol din. Fute uthle vaja bata machh din.


 Dinner  Platter 8) Butter makhano Ruti , Sobji diye Mixed Dal fry,  moshla makhano salad.

Butter Makhano Ruti - 

 Aata gorom jol r alpo nun diye mekhe nin. Lechi kete ruti bele nin. Ruti seka hole butter lagiye casserole e rekhe din. ( casserole e rakhar samay ekta rumal er modhye ruti gulo rekhe rumal ta mure casserole er dhaka lagiye din)

Sobji diye mixed dal fry -

Pressure cooker e Arhar dal , Musur dal, Mug er dal, Kancha mug er dal nara chara kore nin tel chara , ekta halka dal vajar sugondho asle ektu ghee din. Kuchi kora sobji din (ichhe moton gajor, motor suti, beet, kumro, salgom/ olkopi, fulkopi ) jol din, nun ,halud alpo chini diye seddo korte din.
 Tel er opor sada til din foran hisabe. piyaz kuchi din, lal jore veje tomato kuchi din, ada - rasun bata din alpo, paneer kuchi din, kaju, kismis din, ektu por seddo dal ta din. Dal fry ready.

Moshla Makhano Salad -

Sosha, piyaz, tomato gol gol kore kete nin. Zeere vaja guro, gol morich guro, bit nun, lebur ros diye makhiye nin. Khete valo lagbe ruti r dal fry er sathe.

 Pur er jonno -  tel er opor piyaz kuchi, ada rasun bata din , chicken keema din, dhone - zeere guro, nun, halud din, gorom moshla guro, dhone pata kuchi din. Sob koshe nin korai e. Kosha hole ei pur ta thanda kore lechir vetor vore bele nin Radha bollovir size er. Tel e veje tulun.

Songe tok doi e vaja guro moshla, gol morich, lonka guro, nun din. R pudinar chutney poribeson korun (pudina pata, ada, lonka, chini ,nun bete nin).

 Tel er opor gota zeere, sukno lonka, piyaz kuchi din, nara chara kore lal kore vajun. Vaja hole chanachur din, tok doi din, songe songe anch slow kore bhat ta din. Nara chara korun. Ektu por namiye nin. Chot joldi valo rannar item hobe. Eta sudhui khete paren.


 Dinner Plater 29) Paneer Alu Bori Posto , Bhat.

Paneer Alu Bori Posto -

Ek torkari bhat kotha ta jothesto procholito. Office kore asar por sob samay 3 - 4 rokomer sobji, torkari, vaja vuji kora jai na. Ekta valo torkari korlei bhat khaoa jai. R posto bangalir sobar priyo. Sei posto diyei ektu anno rokom baniyechilam bhat diye dinner sere felar jonno. Kheye tripti peyechilam. Apnara try korte paren.

Alu seddo kore nin nun diye (Jol ta rekhe din).
 Bori veje Alur sathe seddo kore nin.
 Paneer nun diye veje alu seddor jol e vijiye rakhun.
kancha lonka,Posto bete nin. Tok doi fetiye nin.
 Tel er opor panch foran din, sukno lonka din,ek chimte halud din, seddo alu diye nara chara korun. Alu ektu lal hole, alu seddor jol ta din, bori, paneer, posto bata din, ektu fute uthle gas off kore fetano tok doi din. Doi diye r fotaben na. Gorom bhat er sathe poribeshon korun.



 Dinner Platter 30) Kurgi Rice.

Majhe modhye jemon halka khete ichhe hoi, temon mas ek din special kichu banateo ichhe hoi dinner e.  Tai ami ei platter e special dish hisabe Kurgi Rice ta keo rakhlam. Eta Middle East er ekta dish. Apnader kache sohoj vabe recipe tule dhorlam.

500gm Mutton ke 1/2 cup tok doi, 1/2 cup piyaz bata, 2 boro chamoch ada - rasun bata, 1/2 chamoch lonka bata, 3 chamoch dhone pata bata, 2 chamoch narkel kora, nun swad moto, r ektu halud diye marinate kore rakhun 5-6 ghonta.

 Tel ( 3 boro chamoch) er opor 3 te lobongo, 3 te elach, 1 ta choto darchini din, sugondho berole mutton diye koshe nin. Mutton norom hole 200 gm adh seddo basmati rice din. Valo vabe nara chara kore bhat r mutton mishiye nin. Swad moto Nun din. Vap e rekhe ranna korun slow anch e 15-20 mint.






Salad, raita diye serve korun Kurgi Rice.


Asha kori apnader 30 Dinner Platter gulo pochondo hobe. Apnara barite try korben.
